Well, you aren’t Hanuman Ji for sure who would lift up the restaurant on one hand, but yes, it is more than possible to prepare the same dishes you see on their menu. Today’s blog enunciates a comprehensive Chicken Rezala recipe (step by step), that tempts you to smell it first, then turn it around to catch a glimpse and then finally engulf it, with a big smile on your face.

Mughlai dishes are adorned with flavours. Each layer of these dishes reveals a different story in itself. Although it is generally told that Rezala originated in Bengal, but its roots are from the Mughal era. Creamy yoghurt clad succulent chicken unveiling subtle and rich flavours of cashew and poppy seeds, not only exhibits splendid aroma but also leaves a mark on your taste buds forever, leaving you greedy for more. Let us make our lockdown a little less gloomy with a hearty bowl of Chicken Rezala.

Ingredients

  • ½ cup Cashews
  • 3 tbsp Poppy seeds
  • 3 tbsp Char magaz
  • Ginger
  • Garlic
  • Onion
  • Hung curd
  • 700g Chicken
  • Kothari’s royal organic Safflower oil
  • Ghee
  • Oil
  • 1 Bay leaf
  • 2 Dry red chillies
  • Cinnamon
  • Cardamom
  • Cloves
  • Black pepper
  • Green chillies
  • Salt
  • Sugar

Chicken Rezala- Step by step recipe

1. Bengal’s everlasting love for poppy seeds plays a vital role in preparing Chicken Rezala. We are ought to make a thick paste out of cashew and poppy seeds with Char Magaz. To be precise, Char Magaz is a melange of melon seeds: pumpkin, watermelon, cucumber and cantaloupe seeds.

2. “Aada roshun bata” is more like a household phrase and a typical Bengali dish is incomplete without this very ingredient. Hence, we have to prepare a paste of ginger and garlic.

3. Onion is that essential ingredient which increases its TRP through its economic value as well as a taste enhancer. Making a paste out of onion is the very next thing to do.

4. Do not forget to wash your chicken. Don’t you take bath regularly? Now bathe your chicken properly and add some hung curd over it.

6. Mix it up while you are sizzling on a hot item number.

7. Pour oil and ghee on a pan and heat it till the Ghee melts. Add bay leaf, two dry red chillies, cinnamon, cardamom, black pepper and cloves into it.

8. After stirring for a minute, add the onion paste into the pan.

9. The stirring game continues and now it’s ginger garlic paste to walk the ramp.

10. It is time to add one of the most important ingredients of the dish i.e., the paste we derived from cashew and poppy seeds. If you want your dish to be tad bit spicy, then do not hesitate in adding some green chillies into the pan.

11. There’s one important aspect of cooking, which all of us should know. Chicken Rezala is neither too spicy nor too sweet hence you can expect a balanced approach of salt and sugar. Add salt and sugar into the pan and stir the mixture well.

12. Let’s put the pieces of chicken into the pan and soak them in the ingredients of love.

13. To elevate the taste we have decided to add a pinch of Kashmiri Laal Mirch from Everest Spices.

14. Close the lid and let the dish cook and simmer for at least 20 minutes. Do not forget to turn the pieces of chicken upside down, in between.
